Cumquat marmelade
All mums should be able to make jam, right? With plum, apricot and cumquat trees in our garden, I'd run out of excuses not to and have had plenty of fruit to experiment with. Our little cumquat tree produced an unbelievable 6 kilos of fruit in its second fruiting season—which was converted into 36 jars of perfectly sweet–spicy–sour marmelade. Hubby has finally conceded that I am justfied in keeping empty jars! (P.S. Donate your empty jars and you might get a full one back—this year's cumquat crop is looking like a bumper!)
